Cold Spicy Noodle Salad

1 Cooked & Shredded Chicken Breast
2 Packets Indomie Mi Goreng Barbeque Chicken Noodles
Salad Ingredients vary amounts and veggies to suit
Red peppers thinly sliced
Celery Diced
Telegraph Cucumber - peeled & deseeded & diced
Carrots Julienned
Spring Onions - Add just prior to serving
1/4 cup chopped peanuts
Fried Onion Sachets - I add extra fried onion
Chopped herbs, Chives, Mint, Coriander
Dressing: 2 Pkts Seasoning Oil (heat so melted) 2 Pkts Chilli Sauce 2 Pkts Sweet Soy Sauce 2 Tablespoons Crunchy Peanut Butter (loosen with hot cooking liquid from cooking noodles) Juice and zest one lime 1 Tablespoon Palm Sugar, Tablespoon Sesame Oil
Cook noodles in water and two seasoning sachets. When cooked drain noodles reserving hot cooking liquid for dressing, chill noodles. Mix dressing by loosening Peanut Butter with reserved hot cooking liquid. Add rest of dressing ingredients and combine. Pop chicken, salad ingrediants and noodles in a bowl, toss with dressing and salt and pepper. Just before serving add peanuts, herbs and fried onions. Great Salad a firm favourite, use whatever seasonal ingrediants to suit. Kids love it.
