SAUSAGE & GARDEN VEG NOODLE PLATTER

4 well-flavoured sausages
1 tablespoon cooking oil
1 bunch spring onions, sliced (whites & greens separately)
3 packs Indomie Mi Goreng Spicy Beef Ribs Noodles
1 cup fresh snow peas, sliced
1 cup red capsicum pepper, sliced
1/2 cup fresh herbs (eg parsley, mint, basil)
1.) Squeeze the sausage meat out of their casings and with wet hands, form them into small discs. 2.) Heat oil in a frying pan over medium heat, and saute sausage discs together with the white parts of spring onoions, until golden brown and sausage is cooked through. 3.) Meanwhile, bring a large saucepan of water to boil. Add noodles and cook for just 1 minute. Drain - reserving 2/3 cup cooking liquid. 4.) Mix all contents of the flavouring/seasoning sachets into the hot cooking liquid. Add this to the noodles. Add the spring onion greens together with the sliced snow peas and capsicum pepper. Return to the heat and cook for 2 - 3 more minutes. (The vegetables should still be bright & crisp.) 2.) Combine the cooked sausage/onion mix with the cooked noodle/vegetable mixture. Pile onto a serving platter. Sprinkle with sprigs of fresh herbs. Note: 'Minimum Effort - Maximum Results! Everyone loves sausages & noodles and this colourful, flavoursome dish gives a nutritious twist to a one -dish meal for 2 - 4.
