Zesty Mi Prawn Fritters

Indomie Mi goreng fried noodles
Prawns (cut small)
Spring onion (finely chopped)
Flour
Egg
Lime
Purple slaw
Avocado (cubes)
Mango (cubes)
Salt and pepper
Oil
Place noodles (I used 4 packets) into a big bowl of boiling water. Leave for about 5 minutes. While the noodles are in the water, cook the prawns. Use a fork to separate noodles and then drain. Add mi goreng ingredients and toss to get the flavours through all the noodles. Add the cooked, chopped prawns, Spring onion, egg, and salt and pepper to the noodles and mix together. Hit oil in pan. Use hands to form noodle mixture into fritters and place on the hot pan. Press on fritters with a spatula to ensure they are quite flat. Cook until both sides are crispy. Place purple slaw over a plate and add fritters to the top. Garnish with avocado and mango and squeeze lime juice over all the dish. Enjoy!
