• 1 packet Indomie Instant Mi Goreng Fried Noodles
• 1 to 1-1/2 tbsp butter
• 2-3 tbsp of any chopped cold meats (e.g. ham, chorizo, salami or combination of meats)
• 2 tbsp of chopped colored capsicums
• 2 eggs + 1 egg white for scrambling
• 1 tbsp milk
• 1 egg yolk for binding the noodles
• 2 tbsp of chopped spring onions (whites and greens)
• Salt and pepper to taste
• Oil to grease the muffin pan
• Salad leaves tossed with some olive oil, salt pepper and a drizzle of balsamic vinegar and sprinkled with toasted sesame seeds
Nests: 1. Cook noodles as per packet instructions. Drain the water. 2. In separate bowl, add all of the seasonings from the noodle packet. Toss the drained noodles and mix well. Allow to cool. 3. Once cool, add the whisked egg yolk and mix well 4. Preheat oven to 180 deg C. Grease the muffin tray – above quantity should yield 3 nests. 5. Bake in center of oven for about 8 minutes. Then put under the grill for a couple of minutes; keep checking to ensure it doesn’t burn. When done take out and let it cool. 6. Add the filling into the nests and enjoy with a salad of choice Filling: 7. Beat the eggs (2 eggs + 1 egg white) and milk till fluffy. 8. Heat butter in a non-stick pan. When the oil is hot, add the cooked meats and toss for a minute. 9. Next add the capsicum and continue to sauté for 30-45 seconds. Add the well beaten egg and mix gently to scramble. When nearly done add the salt and pepper to taste and cook till done. 10. Switch off the flame and add the chopped spring onions. 11. Filling is ready to be put into the nests. 12. Enjoy.
