Egg and Mushroom stir-fry

2 Packets of Indomie Noodles
1 tbsp sesame oil
1 Onion thinly sliced
1/2 tsp ginger
1/2 cup frozen mixed vegetables
1 egg, Fried and sliced thinly
1/2 cup of sliced mushrooms
Spring Onions (Optional)
1. Cook the noodles halfway and drain. Set aside. 2. Heat oil in a frying pan or wok . Stir-fry the onions and ginger. 3. Add mushrooms and mixed vegetables. Stir-fry for 2 minutes or until the vegetables are cooked. 4. Next, add the noodles and sliced egg. Keep stir-frying until the noodles are warm then stir through all the seasonings from the sachet. Remove from heat. 5. Serve hot and garnish with spring onions.
