Festive Spicy Noodle Mini Frittatas

1 packet Indomie Mi Goreng noodles
4 Tbsp self-raising flour
1 Egg
2 Tbsp milk
Chopped veges - mushroom, capsicum, corn, peas, tomatoes
Chopped cooked prawns
Cook noodles as per packet instructions. Drain well, then add flavour sachets to your taste and mix. Press noodles into muffin trays leaving space in the middle for the mix, like a nest. Cook in the oven for 10 minutes at 180 degrees to crisp up the noodles. Whisk together egg and milk, then add in flour and lightly mix. Then add in vegetables and prawns. Put a few spoonfuls of the mixture inside the noodle nests, then put back into the oven for 10 minutes to cook. Sprinkle with spring onions and serve. Can make 6 large, or 12 mini frittatas. Perfect for parties or for fussy eaters!
