2 Packs Indomie Mi Goreng Noodles
1 cup coconut milk
1 teaspoon cornflour
juice & finely grated rind of 1 lime, or lemon
1 red chilli, seeds removed, chopped
2 spring onions, chopped
200 g hot smoked salmon
1/4 cup fresh herbs, finely chopped
1. Bring 4 cups water to boiling point, in a large saucepan. Split each noodle block in two. Add to boiling water and cook for 2 minutes. Drain off water. 2. Blend the cornflour into the coconut milk. (This stops it from curdling). Add the little packets of Indomie flavourings. Stir this into the noodles in the saucepan together with the lime/lemon juice & zest chopped chilli and spring onions. 3.) Return the sauce pan to the heat and bring to boiling point, stirring constantly. Break the smoked salmon into the mix and top with chopped herbs. Cook for 1 more minute. Serve with wedges of lime or lemon and - if liked, a green salad. This is the way to create a 'Gourmet' dish in minutes! The recipe makes makes the most of a small quantity of smoked salmon and the citrus-creamy sauce is & well-spiced with Indomie flavour!
