Mixed Seafood Fried Noodle Inspired Omlette

Cooking Oil
1x brown small onion, diced
6x large Mushrooms, diced
3x medium Tomatoes, diced
2x packs of Indomie noodle
Bunch of Spring Onion cut finely
Handful of frozen mixed seafood pieces
Handful of frozen stir-fry veges ( Broccoli, Cauliflower, Beans )
4x large eggs
Half a cup of milk
Salt and Pepper to taste
Place your noodle packs into a bowl and follow noodle preparation instructions. Add noodle seasoning, sweet soy sauce and fried dried onion sachets only in with the noodles and set aside. In a steamer place a handful of mixed frozen seafood and a handful of frozen stir-fry veges, cook until soft and tender then set aside. Using a generous amount of cooking oil (eg: olive oil). Approximately 2x spoonfuls, place into a pan and place the element on high. Add diced, brown onion and fry until soft. Then add diced mushrooms, cook until soft. Add tomatoes and toss through onion and mushrooms for about a minute. Using tongs drain noodles off and add to the pan evenly distributing noodles everywhere on top of filling. Toss through the mushroom, onion and tomato. Even it out and reduce the heat down to half way ( SAVE THE REMAINING FLAVOUR IN THE BOWL ) (let this cook on medium heat until you see the majority of fluid reduced in pan approximately 4 - 5 mins). In a bowl whisk 4x eggs and add half a cup of milk. Add salt and pepper to taste. Add egg mixture to the outside of the pan and work your way in a circular motion until you get to the middle. Add finely cut spring onion to the egg NOW watch for an even bubble effect all over the omelette. Once there are bubbles appearing in most places of the omelette place in the oven under the grill on 200 celcius until golden brown in appearance. Now the omelette is cooked you can start to plate up omelette onto plates. Serves 3 - 4 people with the remaining noodle flavour zap into the microwave for 1 minute or until piping hot and place your seafood and stir fry Veg into the left over flavour and toss through for a minute or 2 add on top of omelette and drizzle left over noodle flavour down omelette and garnish with left over finely cut spring onion and enjoy.
