Spicy Vegetable noodles

2 tbsp oil
1 large onion (finely chopped)
1 green chilli (finely chopped)
1 large tomato (finely chopped)
1 large boiled potato (cut into small squares)
1/4 cup boiled peas
1/4 cup boiled carrot (cut into small squares)
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp garam masala powder
1 tbsp salt
In a wok heat oil, add onions and saute until they become soft and golden brown. Next add green chilli, the boiled potatoes, peas and carrots and stir-fry for a minute. Then add turmeric powder and stir well. Next add the tomato and salt. Cover and cook until tomato gets mashed well (around 3-4 minutes on a medium to slow heat). Then add red chilli powder, coriander powder and garam masala powder and stir well. Now add 4 cups of water and bring it to boil, add the noodles stir gently, cover and cook for a minute. Remove cover and gently pat noodles to mix well, cook until water is fully absorbed and noodles becomes dry. Serve hot/warm, there's no need for sauce with these noodles, they taste just too good by themselves.
